Cooking has been neglected for a little bit while sorting out car things, so I'm happy to be back at it with an impromptu batch of flapjacks for lunch with friends.
I'm not usually a fan of flapjacks as they're so plain but these have enough flavour added that they're far more rich and interesting, plus banana chips for crunch and dried apricot for chewiness. Delicious.
225g oats
50g butter
75g sugar
3 tbsp honey / golden syrup
1 tsp fresh ginger, finely grated
2 tsp gound ginger
Handful of dried banana chips
5-6 dried apricots
300g dark chocolate
Handful of candied orange peel
Put the banana chips into a bag and bash with a rolling pin to break into smaller bits
Chop the dried apricots finely, add these and the banana chip bits to a large bowl with the oats
Melt the butter, honey, sugar, fresh and ground ginger together in a pan over a low heat until thoroughly mixed.
Stir into the oats and fruit until coated
Press into a lined tray (around 6 inches square)
Bake at 180°C for 20-25 minutes until golden brown
Break up the dark chocolate and melt over a low heat, stir in the candied orange peel
Drizzle this over the flapjacks and leave to set before cutting into squares
