Taco Mix Wraps Lunchbox

A warm spicy number for lunch this week as the weather turned colder

375g minced beef
2 tins kidney beans
1 green bell pepper
1 small red onion
2 cloves garlic
2 large tomatoes
½ cup sweetcorn (frozen)
1 chilli
1 tsp cumin
1 tsp cayenne chilli
2 tsp smoked paprika
8 tortilla wraps

  1. Finely dice the onion and crush the garlic, fry with the mince, stirring regularly
  2. Dice the bell pepper and tomatoes, finely chop the chilli and add to the mixture
  3. Drain the kidney beans and add to the pan along with the sweetcorn
  4. Keep stirring the mixture and drain off any excess fat from the mince
  5. Add in the cumin, cayenne chilli and smoked paprika and stir through. 
  6. Fry for another couple of minutes until the beef starts to just burn or caramelise in places and the corn and peppers are softened
  7. Taste and adjust the spices as needed
This would be delicious fresh for dinner with some yogurt and salsa added in, but I used this for a week's lunches for 2. 

Each lunchbox had 3-4 heaped tablespoons of taco mix and a tortilla wrap - easy to microwave for a minute then enjoy!
