Sadly I can't take credit for this recipe from eatwell101 but it was too delicious not to share
This made a lovely loaf in a big square pan, which nicely sliced into 10 portions, making lunch boxes for the week (with a leafy salad on the side).
The base mixture is quite like cake batter, but thick enough to hold pieces of other ingredients up so they're nicely suspended in the mix.
Perhaps I'll see what other flavours work in the base, I think tomato herbs and cheese would make a lovely variation...
