Although I'm in the "yes" camp on cottage cheese, I know it isn't perfect and isn't one of those instant mouth watering foods. But tight budgets (and tight jeans...) draw me to it as an easy lunchbox option, so how can we make this more delicious?
Just stir in a bit of salt and fat, of course (I'll just buy new jeans...)
Makes ~4 lunchboxes
1 x 300g tub of cottage cheese
1 tsp stilton (more or less, depending how strong you like it)
Salad (we have lettuce, peppers, sweetcorn, spring onion and basil)
200g plain flour
1 tsp baking powder
1 tsp dried thyme
1/2 tsp coarse ground black pepper
2 tbsp olive oil
~4 tbsp water
Crumble / chop the stilton, pop into a bowl with all of the cottage cheese and mix thoroughly. (A little bit of mashing with a fork helps at this point if you have any lumps of stilton, and to help the flavour infuse)
Taste the mixture and add more stilton to your preference
Prepare your salad in a large bowl and toss to mix
Add the flour, baking powder, thyme and black pepper to a mixing bowl.
Add the olive oil and mix through.
Add water 1 tbsp at a time and mix thoroughly until it begins to come together. At this point use your hands to knead until the dough forms.
Leave to rest for ~20 minutes, turn the oven on to heat to ~180°C
Roll out on a floured surface to a few mm thick
Cut into squares and prick the surface of each one a few times with a fork
Bake on a lined baking tray for around 20 minutes or until golden brown
Leave to cool before storing in an airtight container to keep crisp
Everything should keep for several days, so make this in bulk one night and then it's just a quick assembly each morning for that day.
Assemble a lunchbox with a heaped tablespoon of cottage cheese, a generous couple of handfuls of salad and a few crackers (wrapped separately to keep crisp).
