Another lunchbox ticking all the right boxes - cheap, easy to make ahead and delicious.
Makes 1 lunchbox
2 slices bread
1 tomato
A few slices of red onion
2 slices ham
Salad (whatever you like / have in)
2 tbsp oil
1 garlic clove, crushed
1 tsp balsamic vinegar
Mixed herbs, salt and pepper
Turn on the grill to let it heat
Mix together the oil and crushed garlic with a generous pinch of mixed herbs and pepper. Whisk together.
Spoon over the bread and spread slightly, letting it soak through.
Grill for 1-2 minutes on each side until brown and crisp (keep a close eye...)
Take out and leave aside to cool
Chop the tomato and red onion, add to a bowl with the balsamic vinegar, a drizzle of oil and a pinch of salt. Mix until coated and pop into your lunchbox.
Prepare your ham and salad as you like, add to the lunchbox.
Wrap your cooled bruschettas separately so they don't absorb the moisture from the salad and go soft.
I made this the night before and it kept very well until lunchtime the next day, the bruschettas stayed crisp and crunchy, and the tomatoes had enough time to absorb the vinegar so the flavours mingle.
