Spicy chickpea and tahini salad with pittas

A quick and easy lunch with my new favourite ingredient; tahini paste.


Makes 5 lunchboxes

1 tin chickpeas, drained and rinsed
1 large carrot, grated
1 bag of mixed salad leaves
Few sprigs of fresh corriander, chopped finely
1 tbsp oil
1 tbsp lemon juice
1/2 tsp cayenne chilli powder
1 tsp tahini paste

Pittas to serve

Toss all the salad ingredients in a bowl and serve with a toasted pitta... that's it!

Delicious fresh crunch with warmth from the chilli and lovely sesame notes from the tahini.
