Bean and Avocado Salsa Tortillas Lunchbox

Another weekend of diet sin, another week of packing in the veggies in penance... c'est la vie.





Makes 8 lunchboxes

2 tins kidney beans
2 ripe avocados
4 sticks of celery
½ cucumber
10-15 cherry tomatoes
½ red onion
4 tbsp yoghurt
1 tbsp lemon juice
1 tsp smoked paprika
1 tsp tabasco sauce
1 tsp mint sauce
small bunch of fresh corriander

Drain the beans and wash and chop the veg into small pieces.
Add the yoghurt, lemon juice, mint sauce and paprika.
Toss to coat the mixture in the sauce
Taste and adjust the seasoning to preference

Pack two heaped tablespoons of the salsa on a bed of lettuce with a tortilla wrap on the side to pile it into later.
